The Bacon Chop is back on the menu at Montrio Bistro! It's 12 ounces of double smoked pork belly and loin (English-style back bacon) cooked in a Cumberland sauce on an iron skillet in our wood-burning oven. It's then served atop griddled mac-n-cheese, topped with fried onion strings, plated with a jalapeño-honey gastrique, and garnished with a baked tomato. Chef Tony Baker's own Baker's Bacon Chop can only be found at Montrio Bistro, located at 414 Calle Principal in Old Monterey.
