This celebration will include vibrant Mayahuel Aztec Dancer performances and a live blue agave harvesting demonstration by a master jimador - infusing the evening with energy, artistry, and cultural heritage.

Amuse-bouche: crispy pork belly taco with pibil marinade, grilled pineapple, and pickled green mango. Lobster Tail Ceviche with fresh shaved coconut, pickled habanero, coconut water, and mezcal Blanco - perfectly paired with Del Maguey Mezcal Vida de Muertos and Olmeca Altos Tequila Blanco.

1st Course: Blue Fin Tuna a la Plancha, cucumber & lime ponzu, scallion, crispy plantain paired with Desert Door Texas Sotol and Jalisco Raicilla agave spirit.

2nd Course: Roasted Quail mole coloradito, esquites, hand-made corn tortillas paired with Codigo Reposado Mezcal Pechuga.

3rd Course: Wagyu Flat Iron Steak, roasted bone marrow & dry aged beef tartare, pickled mustard seeds with Codigo Extra Anejo tequila.

4th Course: Churros with guava mousse, chocolate sauce, paired with Bacanora agave spirit.
